Bui Van Chuan – Wild Sim Fruit Fermented Beverage Producer Mr. Bui Van Chuan was born and raised in Tan Lap commune, Lac Son district, Hoa Binh province – a land where the wild sim fruit (Rhodomyrtus tomentosa) has long been cherished as “heaven’s gift.” For generations, the sim tree has grown naturally on the local hillsides, valued not only as a sweet-tart seasonal fruit but also as a traditional medicinal plant used in Vietnamese folk remedies. Recognizing the plant’s resilience to poor, rocky soils and its health benefits, in 2017 Mr. Chuan began cultivating wild sim on previously barren hills. The native variety, well-adapted to the local climate, requires minimal chemical input, is resistant to pests, and bears fruit year-round. To enhance product value and shelf life, in 2020 he developed “Wild Sim Fermented Drink” – a naturally fermented beverage that preserves the fruit’s vitamin C, enzymes, and beneficial probiotics. The production follows a strict process: carefully selected ripe fruits are washed, crushed, mixed with raw cane sugar, and naturally fermented in jars for several months before bottling. The resulting drink has a deep purple hue, a gentle sweetness, and the subtle aroma of naturally fermented sim – reminiscent of a light wine, yet with a low alcohol content. It is particularly suitable for elegant gatherings and for those who prefer a refined, health-friendly alternative to beer or spirits. Through this venture, Mr. Chuan not only revitalizes unused land but also promotes a clean, nature-based beverage that supports local livelihoods and introduces consumers to the unique taste of Hoa Binh’s wild sim fruit.
